AL -- I was certainly being dramatic. BUT it's used to be that it was difficult to get a bad meal in Paris.
Unfortunately, that's no longer true. When I take my 5 a.m hike, I see many trucks dropping off that day's (prepared food) at some of the chain restaurants to be "finished" by the "chefs" (e.g. cooks) before serving to diners.

"the demise of the Paris restaurant scene?"...............vraiment?????
Are there any of the "chain gang" restaurants that you'd consider better than others? Do you think the FLO Groupe's restaurants (the upper "class" ones) are contributing to the demise of the Paris restaurant scene?

If you were to signal one out as "the best" = which one would you choose?

I find myself at La Coupole because it's close to my apartment and it's open 364 days a year. PLUS - if you go early or late, it offers a moderately priced "menu."
Please not that the posting I just made was in 3 distinctly spaced paragraphs. No reason why it should not be posted that way.
I don't think any of the Flo Group are real top goodies. The biggest portion of their ownership are extensive popular chains which serve their purpose...like Hippotomas,Tabla Pizza Tavern be Maitre Kanter etc. I would say that Bofinger,La Coupoule,Le Vaudeville, while not top top grade in the food department could be alot of fun to go to,each with their outstanding featurs like the stained glass ceiling of Bofinger. While I once went to a "Baby Boefinger" I understand each one varies.

I hear that Le Beef sur Toit is good....especially in the shell sea food department. I hear Brasserie Julianis on the upper portions of their list as also Brass Flo in the 10th. Didn't care for Balzar before they joined Flo...I hear it went furher south.

Brasserie Lipp has a great seputation....but the format of their Carte is so dull looking and their prices are outragious. It attracts noted French and reserves upstairs "Siberia" for English speakers.
Al:

Which of the Flo chain restaurants would you consider the goodies??
And which ones have gone down?
Let's compare notes?
vaudeville is a brasserie of the Flo chain. What is a wonderment to me is how this chain spawns both good and lousy brasseries and bistros of which Vaudeville is one of the goodies.
The food is good ...and the prices aren't bad if you order the pre-theater or after the theater "menu" ...
The restaurant is fun!
The Vaudeville's one of my favorites, too. There's a menu at an advantageous price, too, if I recall. Nice platters of fruits de mer and good steack tartare (though that also depends on the skill of your waiter). It can get smoky in there, and I've found that at busy times having a reservation may merely move you to the head of the line. But if you're there at a lighter hour (and they're open late), neither is a problem. I'm grateful for the mirrors. Since I almost always sit facing the wall if I'm with guests, the mirrors let me see what I otherwise couldn't of the life of the room.

I went a few years ago after a ballet performance at the Opera Garnier. It is another Flo brasseries but Le Vaudeville still had the Art Deco interior designed by the Solvet Brothers. I recall that the food was good and the prices weren't too bad.

the Vaudeville was originally the bar of the theatre of the same name which was built in 1852 . The Art Deco
interior is lovely. Price for salmon with sesame seeds 18E, rumsteak and potatoes (which got a rave review) under 20E. And the staff was extremely cordial.

If you are in the 2nd and looking for a wonderful cafe, Le Vaudeville is it. It is one of the oldest and most
beautiful cafes in Paris. The terrace gives you a view of the Paris Stock Exchange, a magnificent building.
It is located on the corner of the rue Vivienne and the rue de la Bourse.
